Hearty Breakfast

Scrambled Eggs with Kale.
Caramelised Onions.
Caramelised Mushrooms.
Beef Sausage.
Rosa Tomatoes.
Everyday BBQ Sauce.

Ingredients

  • 1 Cup Kale
  • 3 Eggs
  • 2 Brown Mushrooms Medium or Large

  • Olive Oil
  • 1 Brown Onion
  • ½  Cup Rosa Tomatoes
  • Himalayan Pink Salt 
  • Black Pepper

Instructions

  • Slice the onion (to your desired level of thickness.), mushrooms and roughly chop the kale. Set aside.

To make Caramelised Onion:

  • Preheat a large cast iron pan on medium-high heat.
  • Once the pan is hot, add olive oil. Spread the onions out evenly over the pan, sprinkle salt and pepper over the onions. Cook, stirring occasionally.
  • After about 10 minutes, Add Everyday BBQ Sauce, stir and cook for another 10 minutes or until the onion are caramelised.

To make Brown Mushrooms and Sausage

  • (I used the quarter of the pan to cook the sausage and the rest of the pan for mushrooms)
  • In the same pan, add oil (if needed) and the mushrooms, being careful not to crowd the pan. Season with salt and pepper.
  • Let the mushrooms and sausage cook for 3 to 5 minutes, undisturbed. 
  • Stir/turn the mushrooms and sausage.
  • Add tomatoes, close the pan with the lid, after 2 minutes, remove the mushrooms. 
  • Continue to cook tomatoes and sausage for about 5 to 10 minutes.
  • Add Everyday BBQ Sauce, close the pan with the lid.
  • Deglaze the pan with water, and stir. Let it cook for 2 to 5 minutes, It’s important that the tomatoes don’t burst while cooking. So try not to overcook.

To make Scrambled Eggs with Kale: 

  • Preheat a cast iron pan, add oil and then the chopped kale. 
  • Cook and stir, just until it begins to wilt, slightly, for about 3 minutes. 
  • Pour the egg mixture into the pan. Cook the eggs over medium heat, pushing them back and forth with a spatula, until set to your liking. Season with salt and pepper.
  • Serve immediately.
