Mini Banana Breads
260g Cake Flour
3 Large Bananas
3 Extra Large Eggs
30ml Canola Oil
1 Teaspoon Baking Soda
½ Teaspoon Baking Powder
130g Unsalted Butter, melted
¼ Teaspoon Sea Salt
150ml Plain Yoghurt (Greek or double cream)
200g Castor Sugar
1 Teaspoon Hazelnut or Vanilla Extract
70g Pecan Nuts
100g Chocolate Chips
- Preheat oven to 170℃
- Grease mini loaf pans with baking spray.
- Peel the bananas, and mash them with the back of a fork until they become a puree. Set aside
- Pour melted butter in a medium mixing bowl, and sugar and whisk until it’s well incorporated.
- Add baking powder and baking soda, mix.
- Add eggs, one at a time and whisk, then add yoghurt and whisk again.
- Add banana puree and almond essence, mix until combined.
- Gradually add the flour into the wet mixture. Whisk until all is incorporated. Be careful not to over mix the batter.
- Add the nuts and chocolate chips, mix.
- Transfer the batter into the prepared pans.
- Bake for 25 to 30 minutes.
- Take out the bread from the oven and let it cool on a wire rack for few minutes before cutting.
- Serve with coffee and good quality butter.
