What does Holiday mean to you?


The word ‘Holiday’ can sound luxurious, fun, affordability and other nice things. However, I’ve found that over the years that for some, it means anxiety, family drama, a reminder of being unable to afford due to unemployment or lack of funds. It can bring stress to those who need to buy Christmas clothes for kids, and all other nice and playful things kids need. Therefore, for many the word ‘Holiday’ doesn’t give them an act of rest or a getaway trip or allow them to breathe.

For some of us it means spring cleaning, shopping then rest. For the fortunate some, Holiday means Holiday. It means taking a break and traveling the world. It means dropping off the kids at the grandparents’ home to take a couple’s trip; or have a family trip around the world. It means discovering the world and finding ourselves and so on…… 

For me, Holiday means using cooking and baking as a medium of communication. It means reading some of my 20 new books. It means sitting around the table eating and being interested about the lives and wellbeing of those around me. And when fortunate enough, it means traveling to places that bring a sense of calm and purpose.

In this video and blog, I’m trying to convey this message: ‘whatever Holiday means to you, please take these few minutes to listen to the music that’s meant to make us relax and breathe. So, please relax and breathe. If the recipe interests you, make it. However, please breathe and rest first.’

Breathe…..

Know that the greatest gift of life, is not how much money you have, to do the things you need or want to do. The greatest gift is that you are alive today reading this message and watching this video. Today is your greatest gift of life. So don’t worry about tomorrow, don’t worry about lacking today, tomorrow is a new day with new possibilities. Let us all be grateful and give thanks.

Roasted Harissa Chicken

Prep Time 15 minutes
Cook Time 1 hour
Total Time 1 hour 15 minutes

Ingredients

  • 4 Chicken Thigh Pieces free range
  • 3 Tablespoons Harissa Paste
  • 1 Tablespoon Tomato Sauce
  • 2 Tablespoons Olive Oil extra virgin
  • 2 Teaspoons Garlic crushed or minced
  • 1 Teaspoon Smoked Paprika
  • 1 Teaspoon Potato Spice
  • 1-2 Teaspoon Teaspoon Brown Sugar
  • 2 Teaspoons Onion Flakes
  • 1 Teaspoon Pink Himalayan Salt 
  • 1 Teaspoon Black Pepper
  • 6-8 Baby Potatoes 
  • 20-25 Exotic Tomatoes 

Instructions

  • Preheat oven to 190℃
  • Rinse the potatoes and tomatoes, set aside. 
  •  Mix olive oil, harissa paste, tomato sauce, garlic, onion flakes, smoked paprika, salt and pepper, stir.
  • Put the chicken pieces inside the baking tray, drizzle little olive oil. Add the potatoes, then the harissa mixed paste. Rub the past on the chicken and potatoes. Add tomatoed and arrange everything well for roasting.
  • Season with salt and pepper.
  • Roast for 30 minutes, after 30 minutes baste the chicken and turn the potatoes.
  • Return it to the oven, roast for 30 more minutes.
  • Baste it again before serving.
  • Serve with salad, and enjoy.
