I’m not sure if I’m the only one who gets lazy to go to the shops since having strict lockdown rules. Although lockdown rules are now less stringent on Level 2. The effects however, are not yet over. A lot of us have become anti-social in the physical form. With that said, I still find it exciting and pleasurable to meet people face to face, and chat. Although it’s hard not to hug or touch people one hasn’t seen in a while. As a cook and baker, I love touching to feel textures of things, and this extends to loved ones. I’m a hugger and a toucher, this makes me feel that my loved ones are okay, and this is reciprocated, even when we just converse and laugh out loud.
Today was one of those days where going out was not an option, because of laziness. Lazy or not, I got to eat. That’s when the inspiration for this sandwich came about, hunger. I had English muffins, Provolone cheese and smoked chicken. And I remembered once seeing a Grilled French smoked turkey and provolone cheese sandwich in one of the French videos I watch. So the concept to make it, came from that. Since we don’t have smoked turkey is south Africa, this is my version of the French classic. Also the French one had aioli, my lazy self, had no to time to whisk eggs and oil to make the aioli, so I used mayonnaise, which I believe is similar. I’m a queen of ‘use what you have’. I hope you will try it, and let me know. Also if you drink wine, this sandwich compliments a crisp white wine, very well.
Grilled English Muffin French Sandwich
Equipment
- Baking Pan
- Toaster
- Bowl
- Cutlery
Ingredients
- 2 English Muffins cut in half
- 2 – 3 Tomato Slices
- 4 Slices Smoked Chicken
- Salt and Pepper
- Slices of Provolone Cheese to cover the tomato slices
Mayonnaise Spread
- 2 Tablespoons 2 Mayonnaise
- 1 – 2 Garlic cloves, minced
- 1 Tablespoon Spring Onion chopped
Instructions
- Preheat oven to 200℃ and set on grill.
- In a small bowl, add mayonnaise followed by minced garlic and chopped spring onion. Stir with a spoon or fork to combine. Set aside.
- Cut the two English muffins in half. Toast all slices on a toaster, and set aside to cool.
- Spread the mixed mayonnaise on the toasted slices. Layer on two slices of smoked chicken on two halves of each muffin. Then layer on tomato slices. Season with salt and pepper.
- Add the Provolone cheese slices and then grill for about 5 minutes or until the cheese is melted.
