Here’s my little gift to you, to start your day with.

As cliché as this may be, however it is true, that breakfast is the most important meal of the day. Our mornings set up for success or challenges depending on whether or not we had our first meal of the day. Yes, some things we have no control over, thus, having our first meal of the day helps us to navigate through our daily activities, to make better decisions in solving problems.

 I know cooking can be intimidating for some, just keep trying. Don’t cook to impress or to have a beautiful picture, follow your instincts. From there basic cooking turns to brilliance.

My Famous Blueberry Pancakes

I know cooking can be intimidating for some, just keep trying. Don’t cook to impress or to have a beautiful picture, follow your instincts. From there basic cooking turns to brilliance.

Cook Time 3 minutes
Total Time 13 minutes

Ingredients

  • 130 g Cake Four
  • 1 Teaspoon Baking Powder
  • ½  Teaspoon Bicarbonate of Soda
  • 1 Teaspoon Vanilla Extract or Essence
  • 1 Extra Large Egg
  • 60 g Blueberries (or more if you prefer)
  • Vegetable Oil just a little

SERVING

  • Syrup of choice
  • Blueberries
  • Raspberries
  • Plain Yoghurt

Instructions

  • Melt butter, then whisk in buttermilk, vanilla extract and egg, set aside.
  • Whisk flour together with baking powder, bicarbonate of soda and sugar.
  • Add the wet ingredient into the flour mixture and whisk until combined.
  • Fold in the blueberries, using a spatula.
  • Preheat a large non-stick pan on low to medium heat. When it’s hot, grizzle a little oil, and coat the whole pan surface.
  • Pour about ¼ cup of the batter into the hot pan and cook until you see little bubbles on the top and the edges start to firm up, this should take about 2 minutes, the batter is thick.
  • Flip and cook for another 1 to 2 minutes or until the pancakes are cooked through.
  • Serve with a syrup of choice, fresh fruits and plain yoghurt.
