I have been trying to find better ways to do what I love I was thinking about what to say in this blog, especially when there’s so much sadness in the world. A lot of people sleep with tears running down their faces, some don’t know where their next meal will come from. Some don’t even know where they will sleep today or tomorrow. As an optimist, I believe that, we will all be fine. We just need to hang in there, and trust that our Lord Jesus Christ lives, and that no matter what happens, God is always in control. Let us have faith, always. 

We want this and that, where it gets troublesome,  is trying to make everyone happy and others jack of all I found so much joy in making these recipe videos for you, firstly, this is because it has taken me so many years to find a way that is authentically me in making these videos. I commonly, not fuss about what to eat for breakfast, most days it is rather tad boring. Unlike dinner, which I would put more effort in making, and think of it the night before, my meals don’t get that much attention from me. Well, in the past they didn’t. Although it’s still work in progress, I do think a lot about balancing meals, which means, this has to start from what the first meal of the day would be. From there, what snacks to have before lunch, if any. And so on.

I have iron deficiency and slow metabolism system, and I find that if my breakfast is better, then it means I will have a productive day. The Cast Iron Oatmeal Waffles and Homemade Granola are very good for my metabolism system. Eggs with kale or spinach helps with my iron needs. 

In this post I’m bringing you four types of recipe ideas.

  1. Sour Soft Porridge (Isidudu esimuncu) – this is my all-time nostalgic breakfast. Reminds me of my late grandmother, hers was the best than mine though:-)
  2. Cast Iron Oatmeal Waffles – the healthy buy delicious option.

All the recipes

Sour Soft Porridge – Isidudu Esimuncu

There are many ways to make to make the porridge, from my late grandmother’s method, which was to ferment maize meal for several days. To my mother’s method, which is to use tartaric acid. And finally, to my method, where I use apple cider vinegar for the sour taste.

Ingredients

  • 60 g Maize Meal
  • 450 ml Water extra 120ml to add when needed
  • 4 Teaspoons Apple Cider Vinegar 
  • Pinch of Himalayan Pink Salt 

To Serve

  • Butter
  • Sugar

Instructions

  • Place a large pot on medium-high heat, bring 450ml water to boil. Add salt.
  • Add the maize meal to boiling and salted water (450ml water). Then vigorously stir using a whisk, until there’s smooth consistency and no lumps.
  • Then switch to a wooden spoon.
  • Cover the pot with a lid, and cook the porridge on low heat. Occasionally stir while you cook the porridge for 15 to 20 minutes.
  • After 5 to 10 minutes of cooking, add apple cider vinegar, stir and continue to cook.
  • Add extra water as needed, anytime when you stir and the porridge is too thick.
  • Ladle into a bowl, add sugar and butter for taste, enjoy.

Oatmeal Cast Iron Waffles

These waffles are a really good source of fibre. If you have a slow metabolism system like mine, you won’t regret trying these. They are healthy, fluffy and delicious.

  • 1 Waffle Maker Cast Iron or Electrical
  • 1 Blender or food processor

  • 1 Kitchen Scale

Ingredients

  • 1 Cup Rolled Oats not Instant
  • 3 Tablespoons Desiccated Coconut
  • 1 Teaspoon  Baking Powder
  • 1 Egg
  • 2 Teaspoons Brown Sugar
  • 1/2 Cup Milk
  • 1 Banana
  • Pinch of Salt Himalayan Pink Salt 

Toppings

  • Chia Seeds
  • Banana
  • Raspberries
  • Plain Yoghurt
  • Maple Syrup or Honey

Instructions

  • Add oats, coconut, sugar and baking powder in a blender, then blitz, until it’s fine, or there are very few kernels. 
  • Chop one banana and add, then add milk, vanilla essence and the egg. Blitz until smooth.
  • Preheat the cast iron waffle maker, cook each side for 40 to 60 seconds on medium heat,

Hearty Breakfast

Scrambled Eggs with Kale.
Caramelised Onions.
Caramelised Mushrooms.
Beef Sausage.
Rosa Tomatoes.
Everyday BBQ Sauce.

Cook Time 30 minutes
Total Time 40 minutes

Equipment

  • 2 Cast Iron Pans or any thick-bottomed sauté pan
  • Prep Bowls
  • Airtight Containers

Ingredients

  • 1 Cup Kale
  • 3 Eggs
  • 2 Brown Mushrooms Medium or Large

  • Olive Oil
  • 1 Brown Onion
  • ½  Cup Rosa Tomatoes
  • Himalayan Pink Salt 
  • Black Pepper

Instructions

  • Slice the onion (to your desired level of thickness.), mushrooms and roughly chop the kale. Set aside.

To make Caramelised Onion:

  • Preheat a large cast iron pan on medium-high heat.
  • Once the pan is hot, add olive oil. Spread the onions out evenly over the pan, sprinkle salt and pepper over the onions. Cook, stirring occasionally.
  • After about 10 minutes, Add Everyday BBQ Sauce, stir and cook for another 10 minutes or until the onion are caramelised.

To make Brown Mushrooms and Sausage

  • (I used the quarter of the pan to cook the sausage and the rest of the pan for mushrooms)
  • In the same pan, add oil (if needed) and the mushrooms, being careful not to crowd the pan. Season with salt and pepper.
  • Let the mushrooms and sausage cook for 3 to 5 minutes, undisturbed. 
  • Stir/turn the mushrooms and sausage.
  • Add tomatoes, close the pan with the lid, after 2 minutes, remove the mushrooms. 
  • Continue to cook tomatoes and sausage for about 5 to 10 minutes.
  • Add Everyday BBQ Sauce, close the pan with the lid.
  • Deglaze the pan with water, and stir. Let it cook for 2 to 5 minutes, It’s important that the tomatoes don’t burst while cooking. So try not to overcook.

To make Scrambled Eggs with Kale: 

  • Preheat a cast iron pan, add oil and then the chopped kale. 
  • Cook and stir, just until it begins to wilt, slightly, for about 3 minutes. 
  • Pour the egg mixture into the pan. Cook the eggs over medium heat, pushing them back and forth with a spatula, until set to your liking. Season with salt and pepper.
  • Serve immediately.

Homemade Granola

Total Time 1 hour 10 minutes

  • 42cm Baking Tray

Ingredients

  • 300 g Rolled Oats not instant
  • 2 Handfuls Coconut Flakes
  • ½  Cup  Brown Sugar
  • ½  Cup Pumpkin Seeds
  • ½  Cup Sunflower Seeds
  • ½  Cup Dried Cranberries
  • ½  Cup Coconut Oil melted
  • ¼ Cup Honey
  • 2/3  Cup Nuts

Instructions

  • Preheat oven to 150℃.
  • Using a 30cm bowl add all the dry ingredients, stir to mix.
  • Add coconut oil, honey and egg white. Stir until everything is combined well.
  • Coat a baking tray with a baking spray. Then, spread onto a baking tray and flatten evenly.
  • Bake for 15 minutes, then turn everything over in large sections, using a spatula. Spread out and flatten evenly again.
  • Repeat the above step three to four times.
  • Remove the pan from oven, and turn everything over in large sections. Leave it to cool completely. 
  • Transfer into airtight containers.
